Running out of new dinner ideas? Don’t have a lot of time to cook? Well, you have come to the right blog post! This easy and delicious recipe pairs well with any busy person’s schedule and can be added to any meal. It only takes about 30 minutes and the ingredients are easy and cheap! Serves up to 4 people.
Here is what you will need:
2lbs of ground turkey (you can substitute with beef or sausage if you please)
1 cup of shredded mozzarella
1/2 cup grated or shredded parmesian
2 teaspoons of onion powder
2 teaspoons of minced garlic (I prefer the jar of garlic, which you can find in most grocery stores. It saves a lot of time!)
1/2 teaspoon of Italian Seasoning (don’t have any? Try adding oregano, rosemary, thyme and dried basil)
1/2 teaspoon of Cayenne pepper (add more or less depending on what spice level you enjoy)
1/2 teaspoon of crushed red chili pepper flakes
1 cup of Marinara Sauce (or any pasta sauce you prefer. I usually purchase a plain jar of marinera and add different seasoning)
1 cup of shredded cheese or your choice (this cheese will be the topping. I prefer to make a mix of mozzarella, pepper jack & provolone)
Fresh basil to top it off
Preheat your oven to 400 degrees & give a casserole dish a quick spray of cooking spray.
In a medium sized bowl, mix together the ground turkey, mozzarella, parmesan, egg, onion powder, garlic, Italian seasoning, cayenne, & crushed chili flakes. I prefer to add a small amount of panko breadcrumbs to help hold it all together.
**remember to wash your hands after handling raw meat!**
Set aside the marinara, the cheese for topping, & fresh basil.
Use a cookie scoop to form the meatballs. Place them in the casserole dish making sure there is a little space between each meatball.
Bake the meatballs for 15-20 minutes. When your meatballs are done you can drain the excess grease from the dish. I find when I use ground turkey that I don’t usually have to drain much. This may be different depending on what meat you choose.
Top your cooked meatballs with the sauce you chose, the extra cheese and then place it back in the oven for an additional 5-10 minutes (or until the cheese is fully melted).
You now have a delicious meal for 4 people, and it took you no time at all!
You can serve this dish as is or over any noodle of your choosing, or pair it with a nice spring mix salad.
